Sogi-giri (shavings)......This technique makes shavings of dense foods, such as the bottom of Chinese cabbage, shiitake mushrooms, and chicken.

The increase in surface area created using this technique allows ingredients to be cooked evenly in a shorter time and absorb more flavor.



1Place the knife flat against the object and make thin slices by pulling the knife toward you.

2Start making shavings from the left (from the right for left-handed cooks).

Liquid Measures:
1 cup = 200ml = 6.76 fl oz
1 tablespoon = 15ml = 0.5 fl oz
1 teaspoon = 5ml = 0.16 fl oz
