Horenso no goma-ae (spinach dressed with sesame sauce)
Ingredients (for 4 servings)
1 bunch of spinach (about 10-20 stems)
1 tablespoon of soy sauce
1 tablespoon of mirin
2 tablespoons of roasted sesame seeds
Boil water in a pot. Once it boils, add 1 tablespoon of salt into the pot and boil the spinach (which should be transferred into cold water to prevent discoloration).
Cut the cooked spinach into 5-cm-long pieces, sprinkle it with a small amount of soy sauce, and squeeze it to remove extra water.
Grind the sesame seeds in a mortar.
Mix the spinach, the sesame seeds, and the other seasonings.
