Simmered Mackerel with Miso

Ingredients

4 saba (mackerel) fillets
1 negi leek
3 tablespoons of miso
3 tablespoons of sake
2 tablespoon of mirin
2 tablespoon of sugar
400 ml of niban-dashi soup


Directions

(Ingredients preparation) Saba: notch a decorative cross in the middle

(Ingredients preparation) Saba: pour boiling water over the fillets to remove the fishy smell

Bring the dashi (the mixture of miso, sake, mirin, sugar and niban-dashi soup) in a pot to a boil, and put in the green part of negi

Place the saba fillets and simmer

When the fish is cooked through with the whole fillets becoming whitish, remove them from the pot and place them on a plate. Pour the remainder dashi soup over the saba fillets

Japanese Liquid Measures:

1 cup = 200ml = 6.76 fl oz
1 tablespoon = 15ml = 0.5 fl oz
1 teaspoon = 5ml = 0.16 fl oz
