Kimpira gobo (fried burdock root)

Ingredients (for 4 servings)
1 burdock root
1/2 carrot
1 teaspoon of sesame oil
1 tablespoon of soy sauce
1 tablespoon of mirin
1 tablespoon of sugar



Burdock root: Remove the skin by shaving it off using the back of a knife, cut into 5-cm-long strips, and soak them in water.
Carrot: Peel it and cut it into 5-cm-long strips.


Pour sesame oil into a frying pan, warm it up, put the burdock root and carrot into the pan, and stir fry them until wilted.


Pour the seasonings into the pan and cook them until the burdock and carrot are softer.

Japanese Liquid Measures:

1 cup = 200ml = 6.76 fl oz
1 tablespoon = 15ml = 0.5 fl oz
1 teaspoon = 5ml = 0.16 fl oz
